Overnight Soak Method: Carefully sort and rinse beans in a large pot. Add 6 to 8 cups of cold water for every pound (about 2 cups) of beans. Let stand overnight or at least 6 to 8 hours. Drain water and rinse beans.
To Cook: Add 6 to 8 cups of hot water to drained and rinsed beans. Simmer gently with lid tilted until desired tenderness is reached, about 1-1/2 to 2 hours.
Despite the use of the most modern cleaning equipment available, beans are a natural agricultural product and may contain foreign material. Sorting and rinsing beans before cooking is recommended.
